What We Are Looking For

We are looking for a Chef de Partie to join our team of culinary and front-of-house stars at The Prince of Wales. This privately-owned “posh pub”, is set in the heart of Baslow, sitting on the edge of the beautiful Chatsworth Estate. Our passion is fresh, seasonal food using local ingredients in an informal and relaxed atmosphere.

The Role

As a Chef de Partie, you get to work in all areas of the kitchen. You will report to the Sous Chef and Head Chef. The position will allow you to further learn a restaurant’s culinary procedures, build stamina to handle high-pressure situations, and learn about multiple duties so that you can better determine your goals for career advancement. The job allows you to prove your commitment while working under different section chefs.

 

Key Duties

  • Preparing, cooking, and presenting dishes
  • Managing and training any commis working with you
  • Helping the sous chef and head chef to develop new dishes and menus
  • Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
  • Monitoring portion and waste control to maintain profit margins

The Role

As commis chef, you will work in all areas to learn how the kitchen operates. The position will allow you to learn a restaurant’s culinary procedures, build stamina to handle high-pressure situations, and learn about multiple duties so that you can better determine your goals for career advancement. The job allows you to prove your commitment while working under different section chefs.

 

Key Duties

  • Preparation of ingredients for more senior chefs
  • Maintaining high standards of hygiene
  • Rotating food, putting away inventory, and dealing with deliveries
  • Measuring ingredients and sizing portions accurately
  • Learning about food safety techniques
  • Food preparation, including; chopping vegetables, stocking stations, organizing ingredients, and partly cooking some food

What We Are Looking For

We are looking for an “Assistant Manager or Manager” to join our team of culinary and front-of-house stars at The Prince of Wales. Our passion is fresh, seasonal food using local ingredients in an informal and relaxed atmosphere.

The Role

You are responsible for assisting in the overall management and operation of The Prince of Wales, Baslow. The role will be to work alongside the management team, consisting of the “General Manager” and “Head Chef” to build on the successes of The Prince of Wales.

You will report to the General Manager. You will assist in the implementation and success of our vision.

Key Duties

  • Ensure that guest expectations are exceeded at all times in all areas of service
  • Possess a good knowledge of all food, wines, cooking techniques, and allergy requirements to ensure guests can be advised appropriately at all times
  • Oversee the day to day management of the team, ensuring exceptional standards are delivered and maintained
  • Manage from the front by running and overseeing shifts. Remaining hands-on within the operation
  • Ensure the venue is always presented perfectly, with a strong focus on cleanliness and hygiene
  • Competently manage the ordering and control of stock items ensuring availability at all times
  • Manage back of house service areas to include cleanliness, hygiene, stock control, and wastage
  • Perform all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position
  • Manage and maintain a strong and effective relationship with the kitchen team
  • Be responsible for training and mentoring the front of house team
  • Optimise sales and work alongside superiors to develop the business
  • Implement and develop service systems to ensure the smooth running of the venue
  • Maintain a safe and hygienic workplace at all times
  • Implement events as detailed in the marketing plan
  • Assist in the management of staff rotas
